The short answer
Use about 3 pounds of honey per gallon of mead. That is the standard: it ferments to roughly 13.5% to 14% ABV. Go down to 2.5 lb for a drier, lighter mead and up to 3.5 to 4 lb for a sweet one. "Per gallon" means per gallon of finished must, honey included, not per gallon of water.

Honey to water ratio
Old recipes give ratios by volume rather than weights. Because honey weighs about 12 lb per gallon, they convert neatly:

Weigh it if you can. Honey clings to measuring cups and crystallized honey packs unevenly.
How much honey to backsweeten
Backsweetening means fermenting the mead dry, stabilizing it so the yeast cannot restart, then stirring in honey until it tastes right. It gives you control that a high-honey recipe cannot.

How the math works
Mead makers measure sugar as specific gravity: water is 1.000 and dissolved sugar makes the liquid denser. One pound of honey dissolved in enough water to make one gallon reads about 1.035, which is usually written as 35 "points" per pound per gallon. From there:
- Starting gravity = 1 + (pounds of honey × 35 ÷ gallons) ÷ 1000
- Alcohol = (starting gravity − final gravity) × 131.25
So 3 lb in a gallon starts at 1.105. Fermented to 1.000, that is 0.105 × 131.25, or 13.8% ABV. Honey varies with its water content, so treat 35 as an average: real honeys run from about 32 to 38. That is why every recipe tells you to check with a hydrometer.

How much honey do I need for 1 gallon of mead?
Between 2.5 and 4 lb. Use 2.5 lb for a dry mead around 11.5% ABV, 3 lb for a standard mead around 13.5% to 14%, and 3.5 to 4 lb for a sweet one. Three pounds is about four cups, or one quart.
How much honey for 5 gallons of mead?
Between 12.5 and 20 lb: 12.5 lb for dry, 15 lb for standard strength, 17.5 to 20 lb for sweet. A 12 lb gallon bucket plus a 3 lb jar is the classic 5-gallon buy.
What is the honey to water ratio for mead?
By volume, one part honey to three parts water gives a standard mead (3 lb per gallon). One to four is lighter and drier; one to two is strong and sweet.
How many pounds of honey per gallon of mead is too much?
Above about 4 lb per gallon the starting gravity passes 1.140 and yeast struggles to get going. For very strong or very sweet meads, add the honey in stages rather than all at the start.
How much honey do I need to backsweeten a gallon of mead?
Each ounce of honey raises the gravity of one gallon by about 0.002. Two to three ounces makes a dry mead off-dry, about seven ounces makes it semi-sweet, and about fourteen ounces makes it sweet. Stabilize first, or it will ferment again.
Does the type of honey change how much I need?
Only slightly. Honeys vary a few percent in water content, so the same weight can give a gravity a point or two higher or lower. Measure with a hydrometer and adjust with a little water or honey.
